Kitchen Sink Chicken Alfredo with Rigatoni


Well, it's not actually made IN the kitchen sink, but sort of! When we have long travel days I like to place my crock pot in the kitchen sink of the RV (so it doesn't slide around) and throw in a yummy meal to cook while we are headed down the road! It smells delicious as we roll and dinner is ready when we arrive at our destination! This is a family favorite!


Kitchen Sink Chicken Alfredo with Rigatoni


Ingredients:


  • 1 lb boneless chicken breast (I like to marinate with Italian dressing the day before for added flavor )

  • 2 C heavy cream

  • 1 C chicken broth

  • 5 Tbsp butter

  • 1 tsp garlic powder

  • 1 1/2 tsp Italian seasoning (this can also be to taste)

  • ground pepper to taste

  • 1/2 lb. rigatoni (about half a box)

  • 1/2 C grated parmesan

  • freshly chopped parsley, for garnish (optional)

Directions:

  1. Place cream, butter, broth, garlic powder, Italian seasoning, salt and pepper in crock pot and stir.

  2. Place chicken in cream mixture.

  3. Cook on high for 2 hours, until chicken is cooked through. Transfer to a plate and shred, cover with foil.

  4. Add rigatoni and parmesan to crock pot (stir) and cook for 25 minutes, or until rigatoni is tender.

  5. Return shredded chicken to crock pot and combine mixture. Wait about ten minutes to make sure everything is hot and tender.

  6. Serve and garnish with parsley.

I like to serve this dish with a side of broccoli or salad or both! Add some crusty bread and a nice wine for an elegant touch (don't forget your table cloth on the picnic table)! Enjoy!
